As for spinnaker gear we've always used the normal or nothing special setup. A couple of lines for the guy/sheet which we ran them from the stern blocks up to the jib winches which were on the cabin top of my boat. Sounds from your description that someone may have removed your jib winches which usual sit ontop of the 'bent pieces of metal'.
As for the rudder being tight I would reccomend removal and cleaning at your next haul out. Penetrant may be harmful to surrounding plastic or plastic bearings that may have been used. Most owners have problems with the rudder being too loose so it sounds like your doing pretty good.
