When I (being new to the fleet) asked that same question of some of the veterans at March's fleet meeting, the answer I received was "we don't."
Instead, they said the use the various rigging adjustments (cunningham, backstay, mainsail flattener) to depower the sails, and if it is really honking, a little hiking doesn't hurt either.
But I'm just a blind man reporting what a sighted person told me. I'm sure better experts than I will weigh in here...
