Brutal, it is a big job but very doable. I would recommend the book by Casey, "Good Old Boat". It is an excellent book to guide through the process. I did a reinforcement of my bulkheads that I was pleased with, but it sounds like your bulkheads are too far gone.

Tom Montoya did a complete removal and rebuild of his interior, maybe you could reach out to him through this site. I guess my concern would be the condition of the rest of the boat. If everything else is good, then the interior refit would be worth it, if not.....

Tabbing in new bulkheads is not difficult, especially if you can remove the old ones intact as cutting guides for new material.
